Suggested Coconut Milk Recipes Using Common Instant Products

It is undeniable that the coronavirus pandemic has already and is continuing to shake the world. From one country to another, tons of negative and heartbreaking effects of the still incurable virus has plagued us all. From rural towns to huge cities, strict quarantine and lockdowns have been imposed by the government. Coronavirus is undoubtedly changing the world now.

And since almost everyone is at home and is religiously abiding to the quarantine restrictions, it is a huge challenge for every household especially for the lower class people of the society, to make both ends meet. Those earning their wages on a daily basis have almost nothing for themselves and their family due to closure of most businesses. And in times like this, a rigorous skill to budget resources is required for a household in order to survive.

For the normal pinoy household, preparing daily meals inventively could help a lot when the budget is tight. When food supply could be scarce or is inconveniently unavailable, it is indeed hard to think of what meal to prepare to fill hungry stomachs. But with the help of one of the nation’s well-loved food ingredients, coconut milk, every simple budget meal could still be delish. Here are some suggestions we may try using some of the most known Filipino brands conveniently available at supermarkets and even on sari-sari stores. 

Thai Coconut Curry Ramen

Ingredients needed:

  • Instant Ramen
  • Coconut Milk
  • Lime
  • Curry Paste/Powder

Toppings such as peanuts, jalapenos and cilantro are optional (if available).

Procedures:

  1. Cook instant ramen based on the product cooking instructions.
  2. Before or after turning off the heat, add 3 tablespoons of coconut milk, 3 tablespoons of curry paste/powder and a tablespoon of lime extract.
  3. Stir the mixture well and add toppings if available.

This menu is very simple and easy to prepare. If one is busy juggling tasks at home and needs a quick satisfying meal, this recipe is advisable. Instant ramen noodles are always available especially at convenience stores operating 24/7. One of the most famous brands is Nissin which offers different ramen flavors.

Mackerel with Coconut Milk

Ingredients needed:

  • Canned Mackerel
  • Coconut Milk
  • Ginger
  • Garlic
  • Onions
  • Vinegar
  • Ground Black Pepper

And any of the following leafy vegetables available: Chinese cabbage, spinach, malunggay/moringa leaves.

Procedures:

  • Prepare 2 canned mackerel. Drain the brine solution and set aside.
  • Sauté chopped onion, minced garlic, and ginger cut into strips in a cooking pan.
  • Add 2 cups of coconut milk and simmer for about 5 minutes while stirring the mixture inadvertently.
  • Then, add the mackerel fish and let it simmer. Avoid crushing the mackerel when stirring.
  • Season with ¼ cup of white vinegar and ½ cup of water then stir. Cook for 5-7 minutes and add fish sauce and ground black pepper to taste.
  • Lastly, add any of the leafy vegetable ingredients available. Serve and enjoy!

This recipe is delicious and is very easy to prepare since the main ingredient is canned product. If a mackerel canned good is not available, one may use canned tuna in oil instead as it is more common and cheaper. Most famous brands of mackerel include Saba, Mega, Ligo, Uni-Pak and San Marino. For canned tuna in oil, known brands are Century Tuna, Mega and San Marino. 

Instant Champorado in Coconut Milk

Ingredient needed:

Instant Champorado Pack
½ Cup Sugar
2 Cups Coconut Milk
3 Cups of Water
Powdered/evaporated Milk for toppings (optional)

Procedures:

  • Combine 2 cups of coconut milk and 3 cups of water and boil.
  • Add the instant champorado pack and stir constantly (based on the product cooking instructions).
  • When the mixture is a bit thick already, add ½ cup of sugar (or lesser if you want your champorado to be not that sweet).
  • Stir well until desired thickness is achieved. Serve with powdered/evaporated milk on top.

Champorado is a famous breakfast/merienda meal for Filipinos. For those who don’t have time and skill to cook it using traditional glutinous rice, an instant champorado pack is available in supermarkets. Most famous brands are Maya, White King, Galinco’s and Alfonso’s. Product cooking instructions indicate just water and sugar as additional ingredients but we may choose to add coconut milk to make it creamier. For those who don’t prefer too much sweetness, adding coconut milk is way desirable as your champorado will taste really good even if you don’t add powdered/evaporated milk when serving.
